The pâté is made simply using artichokes of the Violetto variety, extra virgin olive oil, and natural ingredients. Violetto is a very special native artichoke variety. Its name comes from the distinctive purple color it takes on as it ripens. We grow it starting in October, with harvesting beginning in March and ending in early June. The artichokes are harvested and delicately processed by hand within 24 hours. The pâté is made simply using artichokes, extra virgin olive oil, and natural ingredients.
