With a coarser consistency than the classic pâté, this country-style battuto is a treasure trove of the best that a typical Salento garden has to offer in summer: it contains aubergines, courgettes, tomatoes and onions grown between April and May in Salento and hand-picked at optimal ripeness, between June and September.
